Twice Baked Potatoes

2 Idaho potatoes, about 1 pound
¼ cup reduced fat sour cream
¼ cup crumbled Bleu cheese
1 teaspoon fresh parsley
Salt and pepper, to taste

Preheat oven to 400 degrees. Pierce potatoes with fork. Bake until tender, 45-50 minutes. Remove from oven; let stand until cool enough to handle. Cut potatoes in half lengthwise. With spoon, scoop out potato pulp, forming 4 shells. Place pulp in a bowl; add sour cream, bleu cheese, parsley, salt and pepper. Blend until smooth. Smooth potato mixture into shells. Place on baking sheet and bake until heated through, about 15 minutes.
